Steamed Caramel Cake

Ingredients:
150gm Sugar
100ml Hot Water
70gm Butter
75ml Evaporated Milk
1 Egg beaten
150gm Plain Flour
1 Tsp Bicarbonate of Soda
pinch of salt
Method:
1. Place the sugar in a small heavy-based saucepan and heat gently until sugar melts and caramelizes to golden brown color. Take care to keep pan on very low heat to avoid burning the caramel and remove pan from heat once it reaches a golden brown color.
2. Pour the hot water into the caramel. Boil caramel for a few minutes until completely melted and a syrup is obtained. Allow syrup to cool and pour it out into a measuring cup ( u need 160 to 170 ml )
3. Add the melted butter, milk beaten egg to the cooled caramel syrup and stir well to combined.
4. Sift the flour and bicarbonate and salt into a mixing bowl. Make a well in the centre and pour int he liquid. Gradually incorporate the dry ingredients into the liquid, stirring gently with a wooden spoon or balloon whisk form a smooth batter.
5. Fill small lightly buttered cups three-quarters full of batter and steam for 15 to 20 minutes.

My Currypuff/Karipap

Recipe for pastry:
400 gm plain flour
1/3 cup oil
2 tbsp butter/marjerin
1/2 cup cold water
1/2 tsp salt
Method for the dough:
1. Add in salt into cold water.
2. Mix plain flour and butter until resembles coarse meal with pea size pieces of butter.
3. Heat oil in a pan and pour into the flour mixture.
4. Add cold water a bit at a time and knead dough well till smooth.
5. Wrap dough in a plastic wrap and keep in refrigerator for 1 to 2 hours until use.

I was so tempted to make this cheese cake when i found this recipe in the internet, so why not ? So here is the version of my Oreo and Mocha Cheese Cake. Taste really good. Why don't you try it.
Biscuit Base:
200gm Oreo biscuits (crushed)
50gm cornflakes (crushed)
50gm almond flakes (toasted and crushed)
30gm cocoa powder
80gm dark chocolate (melted)
150gm butter (melted)
Oreo Filling:
250gm Cream Cheese
65gm icing sugar
250gm Whipping Cream
1 tbsp vanilla essence
100gm Oreo cookies (coarsely crushed)
10gm gelatine
40gm water
Mocha Filling;
250gm Cream Cheese
70gm icing sugar
250gm Whipping Cream
1 tbsp vanilla essence
1 1/2 tbsp instant coffee powder
2 tbsp instant cocoa powder
50gm Whipping cream (warm)
10gm gelatine
40gm cold water
Method:
Biscuit Base:
Combine all the crushed ingredients into a bowl. Sieve in cocoa powder. Mix well. Stir in melted chocolate and butter into the dry items and mix well. Press the biscuits base into a greased 23cm springform pan and refrigerate 30 minutes.
Oreo Filling:
1. Beat cream cheese and icing sugar till smooth.
2. Sprinkle gelatine on cold water, allow to stand 5 min. Then double boil the gelatine till it is dissolved. Keep it covered until ready to use.
3. Whisk cream until soft peak forms.
4. Fold whipped cream into cheese mixture, add in crushed oreo and stir in melted gelatine lastly.
Mocha Filling:
1. Beat cream cheese and icing sugar till smooth.
2. Sprinkle gelatine on cold water, allow to stand 5 min. Then double boil the gelatine till it is dissolved. Keep it covered untill ready to use.
3. Whisk cream until soft peak forms.
4. Stir in coffee and cocoa powder into warm cream, mix well till it forms a mocha paste.
5. Lastly fold whipped cream into cheese mixture, add in mocha paste and stir in melted gelatine.
Assembling of Oreo and Mocha Cheese Cake
Pour Oreo filling on biscuit base till half full.
Fill up the remaining 1/2 pan with Mocha filling on top of the Oreo filling.
Refrigerate for 6 hours or overnight and transfer cheese cake to a serving plate, decorate with Whipped Cream and Oreo Cookies.

Prawn Fritters/Udang Salut tepung goreng

Recipe here:
Batter:
1 cup plain flour
3 cup corn flour
1 tbsp pepper powder
some spring onion- chopped
1tsp salt
1. Mix all ingredients in a big bowl and add in water and mix well. The batter should be thick but not too watery.
2. Heat up oil in a large pot until heated up properly.
3. Take a few small fresh shrimps beheaded and dip into the batter enough to cover the shrimp and drop it into the oil for frying.
4. Dont cramp too many pieces at one time.
5. Fry until golden brown 4- 5 mins.
6. Transfer to cooling rack and repeat the same process.
