Dragon Fruit Custard Cake

  • Ingredients/Bahan-bahan
Sponge Cake
Prepare one 8" Vanilla Sponge Cake, slice 2 thin layers (thickness of about 1cm)

Dragon Fruit Custard 
900 ml dragon fruit puree ( mix with water )
9 tbsp hoen kee flour
1 1/2 tbsp Instant jelly powder
180 gm sugar

Method for Custard
1. Put all the ingredients into a pot and stir evenly mixed.
2. Cook over medium heat till mixture thickens and smooth.
3. Place a slice of cake into a cake ring ( 9 ") pour in some of the custard and continue the same process till the last layer is covered with the custard.
4. Leave aside to cool before chilling in the fridge.
5. Remove cake from cake ring and you can decorate the top as you like.
